Red Garlic Potatoes and Celery Chicken


Red potaters, onions, chives if you've got them, garlic (pureed or as a powder)


3tbsp butter 3tbsp vegetable oil spread it in your 9x13 pan and get it all over the potatoes so they have a light coat. add onions and chives, salt & pepper generously
Put them in the oven skins up at 425 for 20 minutes then flip them skins down for another 45 minutes adding the garlic with like 10 minutes left to go so it cooks into the potatoes.


Chop up two or three stocks of celery and add peppers once the chicken's skin has sealed. Cooking celery has the most delicious smell.

My roommate was a fan.

This is why I have a quesadilla maker

I keep it simple
Yams, Black beans, Cumin, Sharp Cheddar Cheese, Quesadilla Maker.



Mushroom trip


Step one: Thaw HUGE ASS MUTANT CHICKEN BREASTS. dice up some onion to taste. I forgot to get a picture of the celery but I chop some celery and add it in when I put in the mushrooms.

I'm using shiitake shrooms here... I think chantrelles would go well with this dish too.

I added in the leftover bits of my frozen tuscan vegetables and chopped celery. That goo on the mushrooms is olive oil I dribbled on it, after this picture I mixed up the mushrooms to apply the oil evenly so they'd cook. Mushrooms will cook up quite quickly so be sure to add them in last. You can saute your mushrooms in a seperate pan if you like I just avoid doing extra dishes whenever possible.


Serve with rice...



Yeah it tasted good.
